Under the direction of Arlette Eulert, we have built a space where Peruvian tradition meets a contemporary perspective, respecting the ingredients, techniques, and stories that shape our gastronomic identity. Every dish is designed to be honest, bold, and memorable—an authentic expression of what we believe great food should be.
We do not follow trends, nor do we seek to impress through gimmicks. Instead, we focus on what truly matters: quality ingredients, carefully executed preparations, and a welcoming experience that encourages guests to enjoy without formality.

Our Chef:
Arlette Eulert is one of Peru’s most renowned chefs. She studied Fine Arts at the Pontifical Catholic University of Peru and later graduated in Culinary Arts from Le Cordon Bleu. Her professional journey includes experience in internationally acclaimed kitchens such as NOBU London, D.O.M. in São Paulo, Gaig, Ibai, and Jean Luc Figueras in Barcelona, as well as some of Peru’s most celebrated restaurants, including Rafael, La Mar, and El Mercado.
Today, BRUTO stands at the heart of her culinary vision and serves as her primary creative hub—a space where she expresses a cuisine that is honest, generous, and deeply connected to Peruvian roots.
Throughout her career, she has received numerous accolades for her contribution to Peruvian gastronomy, including the Summum Award for Best Female Chef in Peru in 2018, as well as recognitions from institutions such as Peru’s Ministry of Foreign Trade and Tourism (MINCETUR) and the Lima Chamber of Commerce.
Beyond her work as a chef and entrepreneur, Arlette is actively involved in social impact and cultural initiatives. She is the founder of the Niñakilla NGO in Italy, regularly collaborates with media outlets, and continues to promote Peruvian gastronomy both nationally and internationally.
In 2022, MATRIA was included in the 50 Best Discovery list of recommended restaurants, and in 2025 it was awarded the license to use the Peru Country Brand, reaffirming Arlette’s commitment to representing and promoting Peruvian cuisine around the world.
